Paul New’s farm has been in his family since the 1930’s and started growing certified organically grown quinoa and potatoes in 1987. Since then he added rye and a variety of vegetables to his rotation.
Quinoa is high in protein, essential amino acids: lysine, methionine, and cystine, calcium, phosphorus, iron, vitamin E and some of the B vitamins. Colorado-grown quinoa has a rich, delicate, nutty taste and can be substituted for nearly any grain in almost any recipe. As for Paul’s potatoes, they have a special flavor, which comes from a combination of choosing the best tasting varieties, fertile organic production, and the unique climate that combines intense sun with cool mountain nights. Paul is one of Grower’s Organics owners and supplies us with the majority of our potatoes, including; Russet, Red, Yellow and Purple Potatoes, and four varieties of Fingerling Potatoes.
