MEET THE VILLAGE CORK
One of our favorite restaurants in Denver is nestled at the intersection of Louisiana and Pearl Street, and it's clear to see why we love it so much— in their own words, The Village Cork explains, "Eat, drink and be merry is not just a toast. It's a way of life for us."
This relaxing, wine-focused restaurant is comfortable and consistent. Even though the menu is ever-changing with the seasons, The Village Cork is a staple you know you can always count on. That's why we've been honored to work with them for almost a decade.
We caught up with Executive Chef Caleb Phillips to talk about cooking with organic produce in Colorado, working in the restaurant industry and what makes us all love The Village Cork so dearly.
Why is organic produce so important to the restaurant's success and core values?
Because it’s what we do— fresh, organic food is the foundation of this place. We're always searching out the best products that we possibly can, and that leads us back to Grower's Organic. We’re not trying to be fancy— we just want to cook the best food we know how with the best food we know we can get.
My job is easy. Because I work with so many wonderful, fresh ingredients, it's not hard to turn them into something beautiful and delicious.
Why do you choose to work with Grower's Organic?
I’m all about cutting out the links in the food supply chain. We want to be working with local and organic farmers as directly as possible, and Grower's Organic helps us do that. Brian, Emily and the entire team are so supportive, and they help us maintain connections with farmers that would be difficult to do since many farm further outside of the city than we can practically reach. We get most of our produce from Grower's Organic because they help bridge that gap for us.
What do you wish people knew about organic produce?
I wish people realized that organic produce is not out of reach by price. It's really just a few cents here or there, and it's worth it for your health in the long run. It's not much more expensive, and if you spend the time investing in your health your body will thank you.
What are you most excited about this summer?
The first Monday of every month we host these "Chef Dinners," and the summer ones are so great. We only take eight guests and seat them around the chef's bar. My sous and I serve the entire meal, pour the wine, explain our process and thought behind everything.
Each meal is focused around a seasonal ingredient— next month in September we're highlighting corn for the four-course meal. We take these common seasonal ingredients and show how they can be used in so many different ways. It's a great experience.
